It is a very healthy type of yogurt due to the probiotic and adaptogenic components and the healthy fats from coconut. It is plant-based and very easy to make yourself with only two basic ingredients.
Probiotics are living microorganisms that help to balance the intestinal flora made up of good and harmful bacteria.
Regular (dairy) yogurt contains good bacteria, but the acidity levels in the stomach are too high for them, so they don't reach the intestines alive. That is why regular yogurt is not probiotic.

Probiotic adaptogenic coconut yogurt
This is what you need:
1 can of natural coconut milk (full fat, no light)
2 probiotics capsules
A wooden or plastic spoon
Cheesecloth or nut milk bag
There are different types of probiotics on the market, always use a good quality that is kept refrigerated and that contains one or more of these bacteria : Lactobacillus bulgaricus, Streprococcus thermophilus, Bifidobacterium lactis or Lactobacillus acidophilus .
Healthy Origins probiotics 30 billion CFUs are used in this recipe. You might have to experiment with it if you use other probiotics.
This is how you make it:
For the creamiest yogurt, use only the creamy part of the coconut milk: the coconut cream. This is the top, thick part in the can that separates from the water at the bottom. This process occurs automatically when it's cold, during warmer months you can put a closed can in the fridge overnight, without shaking it.
Spoon the coconut milk into a jar or container and add the contents of 2 probiotic capsules. You only use the powder, throw away the empty capsules.
Stir well with a wooden or plastic spoon (no metal!) until all the powder is mixed with the coconut milk.
Cover with a cheesecloth or a nut milk bag and let it sit outside the refrigerator at room temperature for at least 24 hours. The warmer it gets and the longer you let the yogurt sit, the tangier the taste.
Before serving, put the yogurt in the refrigerator for a few hours so that it sets well.
You can eat it plain or with your favorite fruits, nuts, seeds, homemade jam, etc.
