Bliss balls in 3 flavors

Energy balls, also known as bliss balls are delicious truffles made from natural ingredients with dried dates as a base.
Because they are naturally sweet and have a rich texture, they are the ideal healthy snacks for when you crave something tasty, need some energy or want to treat someone.

Bliss balls are very easy to make and with a few small adjustments you will have a variety of flavors. They are vegan, gluten-free, free of added sugars and dairy.

December is a busy month for most of us with lots of social activities and things that still have to get done quickly.
In addition, the cold weather, lack of sunlight and less time spent outdoors means less energy.

This makes it a perfect time to add some medicinal herbs to your recipes to support you in what you need most.
Adaptogens that make a nice addition at this time of year are for example the I am energized and the I am calm blends.

The preparation method is the same for all of them.

Medjool dates are the tastiest, juiciest and softest dates. If you have other dates at home you can also use them, in that case first soak them in some warm water for 20 minutes to soften them.

Almond and gingerbread spices

10 Medjool dates
50 ml almond milk
2 tablespoon almond butter
1 teaspoon gingerbread spices
1 teaspoon adaptogens

Carrot cake

10 Medjool dates
4 grated small carrots
3 tablespoons grated coconut
1 tsp lemon juice
1/2 tsp cinnamon
pinch salt
1 tsp adaptogens

Pecan chocolate

10 Medjool dates
50 grams of pecans
1 tablespoon raw cacao powder
1/2 teaspoon natural vanilla extract
1 teaspoon adaptogens

How to make them:

Mix the ingredients in a food processor until you have a compact, sticky dough.
Then form balls with your hands. This works best when your hands are moist.

You can then roll the bliss balls in grated coconut, cacao powder or, for example, finely chopped nuts.

To give them a pretty color you can add some fruit juice or spices to the grated coconut. Make sure that the grated coconut is as dry as possible when you roll them, so that it sticks.

Put the bliss balls in the fridge for an hour and store whatever you won't be eating now for later.
